Ice Cream week - French Toast Crepes

It's unofficially summer! After a long winter here in New Jersey, I'm happy to be ringing in the warmer weather with some cool treats and bringing you a full week of ice cream!


I'm happy to be showcasing my favorite Western New York ice cream maker - Perry's Ice Cream. As a member of their Inside Scoopers group, I have had the opportunity in the past to get samples of their seasonal flavors, test some of their small batch samples and tour the factory. Over the past few months, Perry's has been introducing their newest creation online - Perry's Escapes.


Since I live in New Jersey, it's become increasingly difficult to access Perry's Ice Cream. Some Wegmans grocery stores sell the brand, but not all of them in my region. I was left to lust after these new flavors online, until Perry's offered to send me a sampling of their newest flavors. Needless to say, I was excited.


Perry's Escapes are small batch ice creams with rich flavors. Several of the flavors are ones that were previously only available at the ice cream stand (like Movie Time and Queen of Hearts). I decided to pick out three of my favorite flavors and create a tasty recipe around them.

First up this week - French Toast Ice Cream!


After tasting the French toast flavor (it takes like maple syrup, cinnamon and vanilla), I knew that I had to keep a hint of breakfast with this dessert. I made up a batch of miniature crepes, cut up a banana and piped on some whipped cream. Just like that, I had a sweet and satisfying dessert, that would totally be appropriate for early morning eating.

Oatmeal Buttermilk Pancakes

Ever since I started my new job, I've realized the importance of pancakes for breakfast!  All summer long, during my fun-filled unemployment period, I had awesome breakfasts at least twice a week.  I usually made these big breakfasts after my ten mile runs and totally deserved pancakes on a Wednesday.  Now that I'm back to work, the weekend is special once again and that means Pancakes!

Slow Cooker Apple Cinnamon Oatmeal

Happy New Year! It's time to get our healthy eating habits back on track...


If you were visiting the Wilde Kitchen last month, you may have been overwhelmed by the huge quantities of sugar around.  All the cookies, candies and desserts really have wreaked havoc on our usually healthy eating habits!  It's time to get back to basics and fill our bellies with fruits, vegetables and whole grains.

With the new year comes going back to work too!  I'm commuting again and that means I take my breakfast on the go.  Last year around this time, this slow cooker oatmeal became my go to breakfast. I picked up the basic recipe from Monica at The Yummy Life and have tweaked it a little to add some more fiber and flavor.


I prepare a batch of this oatmeal during the weekend and enjoy a warm breakfast each morning on the train. Depending on how I'm feeling will change up the garnishes I add.  Sometimes it's dried cherries or raisins. Some days I like walnuts, others I toss in sunflower seeds. By Thursday I just feel like adding a whole bunch of brown sugar and cinnamon.  You can really make it your own!

Slow Cooker Apple Cinnamon Oatmeal
Adapted from The Yummy Life

1 1/2 cups skim milk
1 1/2 cups water
1 cup steel cut oats
2 Fuji apples, peeled, cored & diced
2 tablespoons brown sugar
1/2 teaspoon cinnamon
2 tablespoons wheat germ
2 tablespoons ground flax seed

Dried cherries, chopped walnuts & chia seeds for garnish

Lightly coat your slow cooker bowl with cooking spray.  Add all the ingredients except garnishes and stir to mix.  Turn slow cooker on low and cook for 7 hours.

Eat immediately or...

Divide oatmeal between four containers.  Place in the fridge until it's time for your daily breakfast.  When it's time to eat, remove one oatmeal serving from the fridge and add dried cherries and 1/3 cup milk.  Microwave for 1 minute.  Stir and microwave for 1 minute more.  Add 1 tablespoon chia seeds and 1 tablespoon chopped walnuts and stir. Let sit for 5 minutes to allow chia seeds the time to hydrate.  Enjoy your breakfast now or on the go!

Apple-Cinnamon Dulce de Leche Sweet Rolls

The holiday season is sneaking up on us so quickly! I think it's time to transition to regular everyday recipes and into holiday ones! I'm ready to make snowman cookies, peppermint-chocolate everything and maybe a savory recipe or two. The next two weeks I'm dedicating to Thanksgiving recipes and today we start with breakfast!

Banana Bread French Toast

I can't believe that it's been months since I shared a breakfast recipe!


I know exactly who is to blame, Boyfriend.  Okay, and me.  The guy I live with doesn't really care for breakfast and we usually spend our weekends at the Starbucks downtown.  Or the Panera around the corner.  Or if we're in a hurry, the Dunkin' Donuts two minutes from our apartment.  Rarely do I spend a Saturday morning frying up eggs, flipping pancakes and pouring tall glasses of orange juice.


The one positive with not having a job right now is being able to enjoy a delicious breakfast on a Tuesday morning!  Sure, I ate this French toast by myself while watching Charmed and sitting on the couch in my PJs, but that doesn't bother me!  At some point in the day I managed to take a shower and put on some real pants.  Then I had a second serving of French toast for lunch.


As long as I am unemployed, I think I'll enjoy making myself fancy breakfasts!

Fudgy Waffles

Normally my cooking is driven by a story or experience, this week I am letting my cooking create an experience.  Here's the background...

For those of you who don't know, there exists a complex network of people whose job it is to get the right products on the shelf of your favorite grocery store.  One of those people is Boyfriend.  To explain to you what he does would probably take a whole post to itself.  Simply put - He works with the brands to get their product on the store shelves and make sure they sell to people like us.


As we enter a new phase in our lives, buying a house and setting roots, Boyfriend is looking for a new job.  He found a job at Chobani Greek Yogurt that he thinks would be the perfect fit (and seriously, I'm all for more CHO in the house!).

Never content to go the traditional route, he asked me to help out (with my cooking talents) to help get him an interview.  Over the next few days, I will be posting some delicious meals we prepared (yes, we!) using Chobani.  Let's all band together and help Boyfriend and Chobani get together!


Then make some waffles, they are delicious.  I'd recommend eating them for breakfast AND dessert.  Afraid of baking?  You can totally do this, Boyfriend made these waffles!  I just gave him the recipe and told him to excessively spray down the waffle iron with cooking oil.

No-Bake Granola Bars

It would seem that we are into the thick of winter here in the Northeast.  I'm pretty sure it was a lot warmer out before I went to Buffalo for Christmas.  Maybe I brought the cold weather back with me?  All I know is, I find myself putting more and more layers on before I head out to the train in the morning.

I suppose that it had to happen eventually.  It's not like I live in Florida and this below freezing snap is a surprise.  It's just that you get used to those warm sunny days and it's sad to see them go.  This cold weather was further a slap in the face this week when I got to work on Thursday to find my office a balmy 40 degrees.  That's right, 40 degrees Fahrenheit.


Apparently sometime Wednesday night, both boilers in the chemistry wing failed and the offices and labs proceeded to equalize their temperature with the outside world.  All the space heaters in the world could do nothing to warm up our chilly offices.  The reason?  Hood fans.

In a chemistry building, you have labs.  In each lab there are four to five chemistry hoods.  These hoods are just like your range hood over your stove, only bigger, and enclosed.  These hoods constantly pull air from within the labs and vent it through filters and out the roof.  This means that they are always bringing in new air from outside, air which wasn't being heated.  This meant that we couldn't do any lab work until the heater was fixed. 

Everyone in our wing made for the conference room to get some computer work done.  It felt like study hall.  We waited all day to hear something, anything, about the boilers.  Our facilities staff was running around the building with large wrenches, people were up on the roof banging on things, I was getting antsy just sitting in the conference room.  At least it was warm in there.


Our facilities team was able to get the boilers up and running Friday afternoon, just before we went home.  At least it will be warm in the office come next week.  Though it will be the first full week back to work, it's going to be a long one!

Cherry Granola Bars

It's Tuesday again and we're making our way through another summer week.  Where did you weekend go?  I know exactly where mine went.  I spent one half of it shopping for cars, which I have decided is way more fun if you are the one buying said car.  Or you actually bring said new car home when you finish buying.  Boyfriends new car is currently spending some quality time with the dealer, while he is away on a business trip in Florida.

The other half of my weekend was spent watching the new Batman movie.  Seriously, it's that long.


Okay, so the Dark Knight Rises isn't really 24 hours long.  It's three hours long.  It is long enough, that it can go from being sunny, to down pouring and back to sunny and dry, over the course of the movie.  I know this because boyfriend and I have discovered a new found love of biking around our area. 

We live in Montclair, NJ, which according to the signs posted in the town, is "Where the city meets the suburbs."  It's a cute little town with a main street full of shops and restaurants.  There's a Whole foods and a weekend farmers market.  If you're into antiquing, there are at least four antique stores right downtown.  There is an indie movie theater and a Red Mango, right next to a cupcake shop and just down the street from a gelato shop.



A coal oven pizza place just opened up that serves the most amazing thin crust pizza.  You can go to Tosca and have their amazing corn salad, full of roasted corn, goat cheese and walnuts.  You can head to Raymond's (lovingly referred to as Raymondo's around our house.  I have no idea why.) and fill up on a plate of eggs Benedict, if you can get a table.  Or you can just get an espresso and macaron from Le Petit Paris and people watch.

It's a great little place to live and conveniently located on the train line.  But since this is New Jersey, we are only a few miles away from several other fun towns.  This Sunday we rode three miles, all uphill, to Upper Montclair (hence why it was all uphill).  While Montclair boasts our little Indie movie theater, Upper Montclair has an equally small movie theater playing the newest releases.


The clouds started to clear around two o'clock this Sunday, so we hopped on our bikes and rode up the hill to Upper Montclair.  (Much faster than our first attempt a few weeks ago I might add!)  We stopped and got sandwiches and smuggled them into the movie theater where we enjoyed three hours of Christian Bale and Anne Hathaway.  We came outside and it smelled like rain, but it was also intensely sunny and warm.  The only trace of the rain was a few puddles here and there and a wet bike lock.

One final random question here.  How much does it cost for a movie ticket at your local theater?  I felt like I was getting a deal the other day only having to spend $11 per ticket on our movie.  This is after buying two IMAX 3D tickets a few weeks ago for $18 each!

Cinnamon Roll Cupcakes

Are you like me?  Can you have breakfast for any meal of the day?  Omelets for dinner.  Bagels for lunch.  Pancakes for a late night snack.  Breakfast, the best meal of the day.  Well, almost.  I don't really like eggs for breakfast.  Eggs - fried, scrambled or over-easy - are dinner fare.


I decided that this week, rather than making pancakes for dinner, I would make a true breakfast for dessert.  Cinnamon roll cupcakes!


A simple vanilla cake, with layers of cinnamon-brown sugar, topped with a layer of cream cheese frosting.  These little treats tasted just like the breakfast buns I can't keep my hands off.  Whenever I make a batch (or can if I'm in a hurry and have a big craving) of cinnamon rolls, I always have at least two.  I know they are about a million calories each, I can't help myself.


These cupcakes were just what I wanted and I was totally satisfied with just one.

Daring Bakers' - Quick Breads!

After months of not being able to participate in the Daring Bakers', I was so happy to read that this months challenge was quick breads!  The Daring Bakers' February 2012 host was - Lis!  Lis stepped in last minute and challenged us to create a quick bread we could call our own.  She supplied us with a base recipe and shared some recipes she loves from various websites and encouraged us to build upon them and create new flavor profiles.


I'm a huge fan of quick breads for so many reasons.  First, they come together fast (hence the name!).  Second, they make a wonderful and delicious breakfast/snack/I'm going to eat it anytime of the day...  Also, quick breads are so versitile, you can make them into anything you desire.


When I was mulling over the challenge, I was looking into my pantry.  I didn't want to make the traditional banana bread or zucchini bread.  While those breads are delicious, I've made them many times before.  Instead of going totally crazy with flavors, I decided to go with a classic flavor profile - cranberry & almond.  By swapping out some of the all-purpose flour for almond flour and subbing in almond extract for some of the vanilla.  I chose dried cranberries over fresh because of the time of year.  If I had thought ahead, I think that fresh cranberries would have lended a perfect tart pop for the bread.  Oh well, next time!

Banana Bread Donuts

I want to thank you all for sharing your stories of your days in braces.  While I'm not looking forward to the next year and a half, I know that it will be all worth it in the end.  Sure, I'll spend some time sipping on smoothies and spooning up risotto, but I'll come out of it all with the smile I've always wanted.  I'm thinking that we'll have to start  monthly smoothie and monthly risotto posts!  I'm going to get so good at stirring!


After my orthodontia appointment Wednesday night, I was feeling fine.  It wasn't until the next afternoon that I was starting to feel the difference and, as strange as this may sound, I was completely aware of my teeth.  Every last one of them.  There wasn't pain, just the sensation that I had a whole bunch of teeth in my mouth and that they were trying to move around.  After reading a bit about the actual process that occurs during braces, I was happy to know that the worst of it would be over after three days. 

Sure enough, come the weekend I was ready to have some (soft) solid foods!  I spent the weekend cooking and baking, filling the house with sweet and savory smells.  If you were following my crazy series of tweets this weekend, you got a sneak preview of Thursdays bagels.  Boyfriend got a cheesey and meaty dinner Sunday night.  And I got to break in my new donut pan.


I waited and waited, until I had a good idea of what I wanted to make, before buying a donut pan.  I figured that if I didn't have any recipes in mind for the pan, it would just sit in the cupboard and gather dust.  Once I collected a bunch of ideas on scraps of papers, boyfriend and I picked up a pan while shopping at Michael's.  You can look forward to many donut recipes to come and I'll enjoy eating them all year long, even with my new braces.

Coconut-Cherry Muffins

When boyfriend and I returned from Thailand, we slept a whole bunch.  For some reason we were just fine when we got to Thailand, well almost fine.  As we walked home from dinner the first night (after sixteen hours on a plane keep in mind!), my body started falling asleep.  My feet would all of a sudden go to bed, while I was trying to walk.  There are some good looking pictures of me, falling asleep at the restaurant.  I nearly fell over at least five times on our way back to the hotel.  Someone kept making fun of me and taking pictures of me as I fell asleep.

After getting a good nights sleep, we were much better.  It was much easier to walk down the street when my legs were trying to take a nap.  The jet lag wasn't too bad and I'm assuming it was because we were so excited about being in Thailand.

  Returning home was a totally different story.  Jet lag hit us both, hard.  We arrived home after travelling from Phuket to Hong Kong to Vancouver to New York City, in a mere twenty-four hours.  We went from eight-five degrees and high humidity to a snow-covered, below-freezing New York, it was not a pleasant return.  When we finally got back to our apartment, things went well for an hour or two.  We emptied out the suitcases, put a load of laundry in the washing machine and showered.  Then we sat on the couch and turned on some HGTV.  That's when it went downhill as we fell asleep for about four hours, oops.

The first morning of being back in our house we woke up at the completely unnatural hour of four o'clock am.  The rest of the week we kept falling asleep at 9:00 and waking up at 5:00.  I was so proud of us when we stayed up until the evening news on Friday night.  Yup, we're party animals.

There was one exciting thing about coming home, other than sleeping in my own bed again, packages in the office!  While we were gone I had a few packages arrive in the apartment office.  One was a book, one was a present for boyfriend and the third was from Kelapo!  I was contacted by Kelapo just before we went on vacation about trying some of their virgin coconut oil.  After travelling to Thailand I was even more excited about getting this package in the mail because we visited a coconut farm! 
The pictures you see throughout this post were from the coconut farm, where they made everything from coconut oil, coconut (or palm) sugar, coconut milk and items made from the coconut shell.  The farm smelled wonderful and was full of bees.  At least the bees weren't interested in stinging us, they just wanted to eat the palm sugar.  When I returned home and opened up the Kelapo virgin coconut oil I was transported back to the coconut farm.  Thank you Kelapo, for bringing me back to vacation.

Pumpkin Raisin Muffins

Okay now, be honest.  Are you still all sugared up from last night?  Did you eat more Halloween candy than you gave out?  Or did you "check" your kids candy and take out all of the delicious treats for yourself?  C'mon, fess up!  Well, even if you might not want to admit it, I'm sure you need a little candy detox.


Growing up, we never had the problem of eating more candy than we gave out.  The reason for this?  In all the years that my parents have lived at their house, not a single trick-or-treater ever came to the door.  Did that stop my dad from buying five bags of candy every year?  No.  When asked why he was putting all those bags of candy in the grocery cart, the answer was always "for the trick-or-treaters."  Big ole liar.  Dad likes candy, plain and simple.  We always ate more candy than we gave out, always.

Even now I can say that I've never answered the door of my own home to a trick-or-treater.  Since moving away from my parents home, I've lived in apartments.  Boyfriend, on the other hand, grew up in a classic suburban subdivision.  He has many memories of costume-clad children ringing the doorbell and screaming for candy.  He describes it as "annoying."  I guess when you're trying to get stuff done, going to the door every two minutes might get a bit old. 

So, for now I have continued my trick-or-treaterless existance.  Perhaps boyfriend and I will buy a house, then we'll have ghosts, pirates and pixies ringing our doorbell on October 31st.  Until then, I'll keep buying the candy, just in case.

Daring Bakers : FRESH, FLUFFY, FRENCH!

The Daring Bakers go retro this month! Thanks to one of our very talented non-blogging members, Sarah, the Daring Bakers were challenged to make Croissants using a recipe from the Queen of French Cooking, none other than Julia Child!



I don't know why these little beauties weren't on my Culinary Goals list.  I love croissants!  While in France last year I ate them every morning for breakfast with my chocolate chaud!  Perhaps I realized that if I knew how to make them, or was successful at making them, that I would be in trouble. 



The problem being, if twelve light and fluffy croissants come out of the oven and there are only two people around to eat them, how many croissants does each person eat?  The inevitable answer is, too many!  While the croissants are cooking in the oven, the house begins to smell warm and delicious.  A sweet, yeasty fragrance starts to tempt you into the kitchen.  You peek into the oven and see those crispy, golden layers and can't wait until the timer rings.


This is exactly how it played out the morning that I made these little darlings.  I woke up at 6:00 to give the dough the final few turns and went back to bed for another two hours.  Around 8:00, I got out of bed to cut and shape the croissants.  They spent a little time rising and warming up, starting to fill the kitchen with their sweet smell.  After a quick egg wash and short time in the oven I was ready to scarf down a few of these French treats.  I held myself back and only ate two, then took the rest to work the next day to avoid any temptation!
