Top Ten Ways
To Avoid Illness while Riding NYC Public Transit

1. Purchase a Hazmat suit.  Paint it to look like it isn't a Hazmat suit, as the NYC police might find you a little suspicious wearing a Hazmat suit on the subway.  Paint your Hazmat suit to look like a nice Italian three piece, wear at all times when riding transit.

2. Avoid licking the hand rails.  Seriously people, those are dirty.  Do you know how many thousands of people ride the subway everyday?

3. Listen before you sit down.  Hear any hacking coughs, snuffly noses or loud sneezers?  Don't sit next to those people, they want to share their virus with you.

4. Don't ride NYC public transit.  Walking is good for you, especially if you have to go fifty blocks and it's below freezing.  Think of how many calories you're burning!

5. Invest in face masks.  If anyone looks at you strange, just start speaking Japanese.  They'll realize you are from Japan, where face masks are totally normal.

6. Don't touch anything!  Don't even lean against the wall.  Just stand in the middle of the train car and maintain perfect balance until your stop.  This is especially easy when you are riding with a friend.  Let them hold the bar, you just grab tight! 

7. Keep your gloves on.  Make sure they are those big fuzzy ones.  You'll be less likely to itch your eyeball while wearing big fuzzy gloves.  Think muppet-like.

8. Get a train car all to yourself.  I've seen this technique done only once.  I'm going to warn you, it involves not showering for a long, long time.  Maybe this should be a "last resort" kind of suggestion.

9. Bring your own air supply.  This will most likely take the form of a scuba diving system.  Wearing a wetsuit is just optional, a fabulous option!

10.  Get a flu shot.  Don't tell anyone you got a flu shot as they will inevitably try to punch you in the arm.

If only I had this all figured out two weeks ago, when I contracted some form of NYC cold virus.  If I was going to be sick, I wasn't going to do it by myself.  I managed to get BF sick too!  The Wilde kitchen has been quiet and the Wilde household got extremely dirty.  Nobody wants to do laundry/dishes/pick up anything while sick, right?


We are both finally on the mend and I made us some dinner last night.  This was so delicious and simple, I might even make something similar to it for Christmas dinner.  It was so easy, I was actually able to get everything cooked and ready at the same time.  Give one recipe a try, or try all three!

Pork Tenderloin with Sauteed Plums and Spinach & cranberry Quinoa

WARNING!!! If you are a Doctor Who lover and haven't watched Saturdays episode, read no further!!! Go watch it!



Okay, I'm going to nerd out on you a little.  The Fall season finale of Doctor Who was so sad!  I know, some people (namely my labmate) weren't fans of the Ponds, but I thought they were so much fun!  I don't feel too bad saying that I'll miss them without calling "spoilers" ahead of time, since they have been advertising the Ponds departure for weeks now.

If you have no idea what I'm talking about, you're missing out.  You need to take a week off of work and get aquanted with The Doctor.  Doctor Who is a show on BBC America that follows the shenanigans of an immortal alien and his companions through time and space.  It's been on TV, on and off, for over sixty years.  It's fun, silly, frightening, dramatic, heart-warming and sad.  Those Brits know what they're doing here.  Not into sci-fi?  Don't worry, it's so much better than American sci-fi. 


If you only have one hour, watch the episode "Blink."  It's a stand alone episode that will pull you in.  Fellow Whovians, what was your first episode?  Are you a long-time viewer and remember hiding behind the couch watching Peter Davies?  Or are you a newbie like me and were introduced to the ninth doctor in 2005?

For now, we all need to wait until Christmas for more new Doctor Who.  I'm a little sad.

Pork Tenderloin with Sauteed Plums
Adapted from Everyday Food

I was able to get boyfriend to eat pork by making this meal with pork tenderloin.  He refused to eat the plums and told me fruit is lame.  Actually he said something a little more colorful than that, but this is a family friendly blog!

1 pound pork tenderloin
4 plums
1/2 yellow onion
1 tbsp butter
Olive oil
1/4 cup pomegranate red wine vinegar
Salt & pepper

Trim pork tenderloin and slice into 1-inch pieces.  Pound pork medallions thin.  Cut plums in half and remove the pits.  Cut each plum into 12 pieces.  Slice onion thinly.

Heat butter and olive oil over medium-high heat.  Cook pork tenderloin, approximately for 3-4 minutes per side.  Do not crowd the pan with pork, cook in two portions if necessary.  Once pork is cooked, remove to a plate and set aside.

Add 1 tbsp olive oil to the pan and add plums and onions.  Stir to coat in oil.  Saute for 5 minutes, or until the plums are slightly softened.  Add vinegar to the pan and let cook down for 1 minute.  Return pork to the pan and toss together.

Spinach & cranberry Quinoa
Inspired by Everyday Food

1 tbsp butter
1 tbsp olive oil
1/2 yellow onion, diced
1 clove garlic, minced
1 cup quinoa
1 1/4 cup chicken stock
1/4 cup dried cranberries
3 cups baby spinach
Zest from 1 lemon

In a medium pot, heat butter and olive oil over medium heat.  Add onion and garlic and cook until softened, about 4 minutes.  Add quinoa and stir to coat in oil, cook for 1 minute.  Add chicken stock and bring to a boil.  Reduce to a simmer and cover with a lid.  Let simmer for 15 minutes, add cranberries.  Let simmer for 5 minutes more.  Add spinach and lemon zest and stir.  Cover with a lid for 5 minutes to wilt spinach.  Taste and season with salt and pepper.

Pork Tenderloin Salad


I hope that you all had a fabulous weekend.  I spent this weekend all on my own, for the first time since I moved to New Jersey.  Since I moved in with boyfriend!  He's away this week, spending time with his parents then off to a meeting in Florida.  I was invited along, but being a newbie at my job, I haven't got access to my vacation time until I hit the 90-day mark.  So, here I am, chilling out in New Jersey on my own.

What did I do this weekend?  Terribly boring things!  Saturday I spent the afternoon in New York City, shopping.  Now that might sound exciting, but I had a shopping list full of boring items.  I was on the hunt for new t-shirts, tank tops and underwear!  Underwear shopping might be exciting for us girls, but I think boys care very little about the actual purchase of these things.  Same thing with my trip to the Gap to buy black and white t-shirts.  Saturday night was spent watching HGTV and eating a huge Panera salad.

Sunday I had big plans to make lots of candy for Candy Challenge 2011.  Unfortunately, Mother Nature had other plans for me.  The torrential rain that poured down all day Sunday was not the best weather to boil sugar, make toffee and temper chocolate.  Instead, I wandered around my new town, stopped by the library and watched a movie at our local theater.

Boyfriend doesn't come back home until Thursday, which means I can take up the whole bed, sleep with the windows open and turn on all the lights when I wake up.  Generally I try to be more courteous, since I wake up at 5:30 in the morning.  This week I can do whatever I want!  Sadly though, there is no one here to taste test my food or bring me drinks when I'm too lazy to get off the couch.  Who will do the dishes when I make a mess in the kitchen?  Come home boyfriend, I miss you!

Pork, Cranberry and Pear Salad

Oh boy! I just had the best dinner! In order to properly feed myself, and make my mom happy, I decided to make a real dinner. My mom is slightly concerned with my wacky eating habits of late. Let’s just say yesterday for breakfast I had a slice of chocolate tart. For breakfast this morning I had some cookies. Several nights last week dinner consisted of lettuce.

Now it’s not that I’m a bad eater, it’s just that there was no food in my house! I returned from my thanksgiving vacation Monday afternoon to a slice of bread and some far-past expiration milk. There were a few onions and maybe some mustard. It was a sad state of affairs. This is how things usually are when I return from a trip, except this time I came back with a cold. It slowly took over and made me lazier and lazier. I managed to buy some milk and cereal from the Dollar General across the street, but beyond that, I had eggs.

After some concern from my mom (talking about protein and nutrients) I decided I should probably go to the grocery store. Armed with this recipe, I bought my ingredients, substituting here and there for what was one sale (I’m cheap too!). I was not disappointed; this was the best meal I had in a while. Apple Cider Pork chops

Dinner dinner dinner! Ring ring ring! Come and get it! Okay, that’s enough. You get the gist of it, we’re not making cookies today. We’re making Pork Chops! This came out of a moment of hunger and desperation. You know those moments. You find yourself staring into a near empty fridge, trying to decide what to make for dinner. What? All I have is a package of pork chops and a gallon of apple cider? BAH!

Luckily it all turned out okay. Apple cider makes me happy. This is why I am such a happy person in the fall. Okay, maybe it also has to do with the tons of Halloween candy I eat or the fact that I’m a fall baby and I get birthday cake. I am also that one person that orders a Caramel Apple Cider from Starbucks, in July. Reducing the apple cider deepens all the tangy, apply flavors. If you happened to make some of my cranberry chutney earlier in the week, then that would also be amazing paired with this reduction.
