Singaporean Chicken


Last year I had the privilege to visit the island nation of Singapore. I was there for a work trip, where we had to meet with some government officials, university doctors and local companies. It was a whirlwind trip that started with lost luggage, but ended with one very enjoyable day sightseeing.


The president of my company is a very kind man. He believes that if you are going to fly halfway around, you should at least have a moment to see the city. After four busy days of work, I got to walk down Orchard Road and window shop, I took in the views on top of the Marina Bay Sands Hotel and ate some seriously tasty food at a food stall market.


During my day of being a tourist, I picked up a few cookbooks. I can't believe that it has taken me over a year to try out some of the recipes! I'm so happy that I finally made this chicken dish. The flavors are amazing and it's an easy weeknight dinner. Give it a try and enjoy a taste of Singapore!

Spice-rubbed Chicken & Gratin Dauphinois

It's officially summer around here and it finally feels like it!  We've been hovering right around ninety degrees here in the tri-state area all week.  And I love it.  Love!  Of course my hair has been all sorts of crazy in this high humidity, but since I don't have a job right now, who cares! 

I've fallen into a pretty good routine through my unemployed weeks.  Generally Monday is my cleaning house day.  I'll do the laundry, vacuum and dust the apartment, run boring errands and cook the fanciest meal of the week.  By Tuesday I've run out of task-oriented things to do and tackle projects that have been sitting around for a while.  I'm talking scrapbooking, closet organizing, de-cluttering.


When Wednesday rolls around I don't really have much to do around the house, so I text some OSI friends and get together for brunch or lunch.  (This week we're heading to Clinton Street Bakery for brunch and then shopping for interview clothes in SOHO!)  Wednesday night used to be Boyfriends night to cook, but since I'm home already and he doesn't really like to cook, I've taken it back.

By the time Thursday comes, I'm starting to get a little bored at home.  I usually will jump on my bike and head to the local park for relaxing and reading in the sun.  Thursday usually also means I've run out of fruits and vegetables and a Whole Foods run is necessary. 


Friday is Treat Yourself! day.  This week that consists of an orthodontist appointment!  Thrilling.  Generally it means I hang out at Starbucks then head across the street to the nail salon.  Mostly I'm just excited for Friday because it means the weekend is here and I get to spend time with BF.  It's his job to entertain me through the weekend!

Why Bother? 2012 - Hot Dog & Hamburger Buns

As the majority of the northern hemisphere begins to shake of the last winter chill, we start to think of one thing – being outside. Summer evokes thoughts of times spent in my parents backyard. The backyard would serve many a purpose… Dog-training arena, where I would try to get our golden retriever to play fetch. Operative word being try, she was more of a watcher… Campground, where in the hot nights of the summer my brother and I would camp out in tents, with the dog watching guard… Slip’n’slide/water-soaked wasteland, where we would set up the slip’n’slide at the top of the hill and hurl ourselves to the bottom. We would inevitably wind up sliding off the end and becoming covered in grass…


Most importantly, our backyard was Grill Town. While the grill was never packed away for the winter, it saw its prime use during the days of warmth and sunshine. Grilled chicken, shish kabobs, hot dogs and hamburgers. The grill would see lobster tails and freshly caught fish, Polish sausage and corn on the cob.

Let it be known here and now, I was never in charge of the grill. In fact, to this day I have not cooked anything on a real outdoor grill. The reason? I scared myself half to death while trying to light the grill in the summer of 1993. The simple lesson I learned, do not let the grill fill up with propane before clicking the ignition switch. KA-BOOM! I’d like to eradicate this fear, but currently I don’t have a backyard. I think it’s safer for all of us.


While I might not have a grill, or a place to grill, or the courage to buy/ignite a grill, I do have a grill pan. I have also had it long enough that it has a nice seasoned coat on it. I know it’s not the same, but it’s all this apartment-dwelling, grill-exploding woman has! Luckily this Why Bother? Challenge isn’t about grilling. The month of May is dedicated to all things hot dog!

We start the month with hot dog and hamburger buns! In two weeks we’ll perfect our ketchup and mustard-making skills. We’ll finish out the month by making pickles and you’ll be ready for all of your summer BBQs!


Why are we bothering to make our own hot dog buns? It’s because the store-bought variety consist of 99.3% air. Seriously. Go to your local grocery store and grab a bag of buns. Now squeeze them and squish them down as hard as you can. You’re left with a ball of bread that is about the size of a golf ball. Now carefully put the buns back on the shelf and walk away, quickly.

Air-filled buns are generally flavor-free. These buns should only see the plate when there are fifteen of them piled high and you’re in a competition to eat the most hot dogs in two minutes. Personally, if I’m going to eat it, I want it to have a little flavor! These buns that I made last weekend totally delivered.


These aren’t your average weakling hot dog/hamburger bun. They are sturdy, have great texture and have flavor for days. They were best the day they were baked, but sprung back to life with a few minutes on the grill. These guys are simple white bread bun and I have major plans to make a whole-wheat version before the summer is up.

Mustard-Glazed Chicken

Sometimes a girl gets a little busy. So busy that she hasn’t had a haircut since July. So busy that her car registration has been expired for a week and she hasn’t been able to go to the DMV and get new plates. So busy that she has to go to the dollar store and buy milk (yes, they sell milk! And boxed brownie mix…). Yes, life tends to pile up around here. Although I consider today a big win, because I put the dishes in the dishwasher, then I turned it on. Boo-yeah, clean dishes.



And even the haircut isn’t that bad. When I moved from Colorado to Connecticut, I spent two fabulous weeks visiting friends, family and boyfriend in Buffalo. I like going to Buffalo in the summer, it’s so nice out. I spent time in the garden with my mom, well, she gardened, I rolled around the lawn with the dog. I went for a long bike ride along the Niagara river with my dad, then we ate our weight in ice cream. I went to my brothers new house and saw all of the work that he’s put into it. Dude knows how to handle a table saw, I was very impressed. I know how to put together Ikea furniture.

The most hilarious time was going to the salon with my mom. When I first got home she mentioned that she had a hair appointment and perhaps I would like to get my hair done too? But why? You don’t like my hair? It’s so pretty. When was my last haircut? Ummm, right before my thesis defense… in August… of 2008. That’s right, two whole years since my last haircut! When I arrived at the salon the stylist asked what I wanted to do with it. I suggested that we cut off enough so that my mom didn’t think I looked like a homeless person anymore. Stylist laughed, but she thought I looked like a homeless person too. At least she complimented my jeans.


So I figure I have at least another year and a half before I really have to get another haircut. In the meantime I’ll try to head to the grocery store. This dinner, while delicious, was made out of necessity. I had a half bag of carrots in my fridge, leftover from making chili. I had some chicken quarters, purchased and frozen three weeks ago while on sale. Everything else you need to make this meal will most likely be located in your pantry. Feel free to use dried herbs, I know I did!

Buffalo Chicken Burgers with Carrot-Celery Slaw

If you grew up in my house, then you grew up grilling, all year round. The weather turning cold is no reason for my parents to pack away the grill. Pouring down rain isn’t even a reason to use the stove. We would grill out on the deck in the chilly fall winds, during the darkest days of winter and through the wet days of spring. Remember one more thing, I grew up in Buffalo, NY. That’s right, snow country. It is not uncommon to visit my parents house in December, to discover a little shoveled path, leading to the grill.


Personally, I think my parents are a little kooky. I think it harkens back to one moment in my childhood. Being asked to start the grill, by myself. I believe I let the gas run for a little long, and there was a grand BAM! when I struck the lighter. No fireball, no singed eyebrows, no trip to the emergency room. Just one traumatized eleven-year old. I will still, to this day, not light the grill, but I love coming home in December and grilling hot dogs at home.


I know, it’s a little crazy on my part. I’m a chemist. I use Bunsen burners all the time. I work with chemicals that will spontaneously light on fire. Yet I am still afraid of the gas grill. This is why I own a grill pan (I also don’t have any outdoor space and I think my apartment building wouldn’t be too happy with me running a grill in my bedroom). However, if you are brave enough to light your grill, then you should go get out some burgers.


The best part of these burgers is the slaw. Crunchy, cool and tangy, it complements the spicy burgers perfectly. If you happen to have a food processor with slicing and shredding discs, then your prep for this slaw is minimal. The burgers can be store-bought, because they get their flavor from the hot sauce. And really, how can I pass up a recipe that puts wing sauce on a burger?
