Baked Pears & Salad

This whole, Working in the real world, thing is taking some getting used to!  Between the corporate and academic worlds there seems to be an inverse relationship between working hours and meetings.  That relationship has been very apparent this week and it's only Tuesday.  Let me explain.


While I was working in academia I spent the majority of my hours in the lab.  I have friends who worked for professors with set work hours of 9am - 11pm, with an hour break for dinner of course!  Yet, when it came to meetings, they were almost non-existant.  We had once-weekly group meetings for an hour or two every Monday.  During the summer we didn't have any meetings!  Summer was the time to get lots of work done in the lab, not time to sit in the conference room!

Working in the corporate world, my hours have been cut in half.  Sadly, my time in the lab has been reduced by at least 60% too.  I like working in the lab, I like making stuff.  With this decrease in working hours has come an increase in meetings.  In the 16 work hours so far this week, I've spent half of them in meetings.  My butt has been falling asleep a lot, I need to bring my office chair with me to these five hour meetings.


I've been told to get used to all the meetings, because my schedule is only going to get more full as I've worked there longer.  At least I'm learning lots of new and exciting things at these meetings!  Sounds like my working hours are going to increase a little more as I get a fuller schedule, luckily I was given a laptop at my new job!

Gorgonzola Pasta


Hey everyone, I hope that you had a great week!  I can't believe that it's already August!  This last month has brought a lot of change and I'm starting to settle into my new routine.  I've been working at my new job for a month now and I'm loving it.  It's totally different from graduate school and my postdoctoral position, but in many great ways.  I'll tell you more about that next week!


You also know that I've moved in with boyfriend and that I've been getting used to living with a boy (eeewww!  Boys!) and learning his finicky palate.  Boys and girls definitely have different likes and dislikes when it comes to food!  I'm working on finding that happy medium between our two menus.  The main issue being that boyfriend loves all things pasta and I love fitting into my pants.

Another big change happened last week with this loss of our family dog, Zoe.  I realize that this was a bigger change for my parents, who lived with Zoe, but she was still my buddy.  But if you scroll down, you'll notice some pretty little ladies.  I want you to meet Bella and Izzie! 


They joined the Wilde parent household this week to try and fill that big hole left behind from Zoe.  According to my parents, they are crazy.  All I know is that they are super adorable and I want to go home and play with them.

Sun-Dried Tomato Pasta


Not every dish is a winner, at least, according to boyfriend.  Personally I loved this dish.  We were in fact thinking the exact opposite thing.  This is how this dinner went down...

Picture us, sitting on the couch, enjoying an episode of House Hunters International.  I've spent the last twenty minutes, slaveing away in the kitchen (not really) on a hot summer night.  I presented boyfriend with a delicious bowl of pasta and he likes pasta.

There I am, shoveling goat cheese and sun-dried tomato covered pasta into my mouth.  Tangy, sweet and savory, I'm definitely enjoying this dinner.  My only complaint, I'm thinking "I wish I had more goat cheese."

Meanwhile, boyfriend sits in his chair, meticulously eating his bowl of angel hair.  He's looking a little suspicious of what I'm feeding him.  Then I hear "What's the white stuff?"

"It's goat cheese, it's delicious."

"Huh, I think you gave me too much of it."

Too much goat cheese?  Is there such a problem?  So, note to self.  Boyfriend loves pasta, boyfriend does not love goat cheese...  yet...

Casatiello

I’m a big fan of the two-in-one. As a kid I had a massive collection of skorts. You know, skirts with shorts sewn into them? Actually I have a ton of them still, but I wear them when I teach Bodystep classes… Skorts are awesome.



I know we’re all big fans of the printer/scanner/copier! I mean, what did we do before we had them? Walk to several different machines to do our printing, scanning and copying? Crazy talk. That’s like having multiple remote controls for all of your TV attachments, silly.

Now who has a cell phone that is just a phone? Even my not-so-fancy Palm Centro (it’s blue!) is a phone, computer and lets me play solitaire. Love the multi-tasker. Someday I’ll have a fancy phone that lets me start my car from another state, maybe I’ll have to get a fancy car first. One step at a time!


The bread that I made this weekend from the Bread Bakers Apprentice is just that, a multi-tasker. It’s also a time saver! It’s bread, cheese and meat, all in one! No need to make a sandwich, just slice a piece off and you’ve got it made!

Ham & Cheese Risotto

All you have is ham? Go back two spaces. Get away scott free after breaking the gym lights. Go ahead three spaces. Dramatically break your ribs on the first day of your honeymoon. Go back one space. How many board games do you know of that contain these particular cards? How many games can only be played in the presence of one person?  Have you ever played a game that it doesn’t matter how well you do, you might never win?



These playing cards all tell stories; they are glimpses into my friends life. This past weekend was a walk down memory lane and it was one hilarious walk. Boyfriend and I journeyed to Buffalo, NY this weekend for a surprise birthday party. It was a long trip, six and a half hours in the car, and we spent barely more time in town than we did in the car. Thankfully, the party was all worth it.

We were there to celebrate the 30th birthday of a longtime friend, T-. Many of us had come from far away, travelling in from New Jersey, Ohio and Washington, DC. We had all gone to high school and college together and this is the year that we all turn 30. So, in a sense, it was a celebration for all of us! (Happy birthday class of 1999!)

The night was topped off with a present, the present to end all presents! A board game. This was not just any board game, it was the Game of T-! To celebrate T-'s birthday, several friends got together and created a board game of his life. Since we’ve all been friends for the past fifteen years, there are many, many stories we share. This game brought all the memories back and I have to give major props to the friends that brought this game to life. We were up into the late hours of the evening playing this game, laughing and reminiscing. Stories were retold for the benefit of those who came into our lives at later points and oh yes, did I mention the laughing?


To continue the celebration, I decided to make some ham and cheese risotto. An homage to D-, who was disappointed by what T-‘s fridge had to offer one late night. Perusing the fridge, D- professed “All you have is ham?” Then he decided to open a can of tuna.

Gorgonzola Risotto

You’ll notice a little something different about today’s post. No pictures of food! Now don’t worry, I am giving you a recipe (a very delicious recipe in fact!). However the pictures of the food weren’t nearly as pretty as my pictures from New York City last weekend! You might remember that I met my mom in New York last weekend to celebrate her birthday. We had three girls-only days in the big city.


I’ve been to New York a many number of times and know my way around pretty well. Of course, it’s pretty tough to get lost when you’re in Midtown, all the streets are numbered. Once I get to the East Village is when I start to get all turned around, especially after coming out of the subway. I think all I need is a compass, then I wouldn’t go the wrong direction nearly as often as I do. It’s too bad the compass on the iPhone doesn’t work in New York. The signal bounces off the buildings and your GPS thinks you are inside of a building three blocks away, not helpful.


So what did we do in our weekend in the city? We went shopping, we saw the sights and we watched a show. We also ate a lot of cupcakes. Seriously, we had cupcakes every single day that we were there. Rather than heading to just a single bakery, we decided to check out a couple of different ones. You know, we had to compare and contrast the product, right?


Personally I fell in love with my peanut butter cup cupcake from Crumbs, although I was covered in frosting when I finished eating it. I was licking it off of my elbow, I’m pretty sure there was frosting in my hair too. I was a little wired that night! Mom liked her vanilla cupcake from Eleni’s Bake shop, located inside of Chelsea Market. They also served up a mean raspberry cupcake, super delicious.


It was a great weekend, full of history, culture, shops and sugar!

Snack Week! - Ham & Cheese Scones

There are good scones, and there are bad scones. I’ve been unfortunate enough to have had many, many bad scones. In the winter months in Madison, WI, the Dane county farmers market migrates inside. If you head to the beautiful Monona Terrace, overlooking lake Monona, you can still get local produce, fresh baked deliciousness and dog treats. Although I think it’s mean for them to sell dog treats, when dogs aren’t allowed at the farmers market. Such a tease for the pooches.



It was during one of these cold, wintry weekends that my parents came for a visit. As we’ve discussed before, winter is not the most desirable time of year to visit Madison. Unless you like ice fishing, apparently ice fishing on lake Mendota is amazing. So ice fishers, head to Madison. Back to the parents, I decided we should head to the farmers market, because there isn’t much else to do on a cold Madison Saturday. We stocked up on jams, carrots and cheese then picked up some pastries from the Amish table.


Nothing against the Amish table, I’ve had lots of their baked goods. The pies are amazing, the cookies are perfect, but these scones… let’s just say the dog would have loved them. They were dry and lacking flavor. I was so sad, we stopped at Starbucks and got some cookies. The Amish cart redeemed itself later in the summer with another knock-out pie.


So, while I’ve had some pretty amazing scones, they are so heavy and calorie laden that I try not to indulge that often. The average (delicious) scone from Starbucks has over 450 calories. More of a meal than a snack. Here I introduce a protein rich, lower calorie scone. It’s not filled with sugar and dried fruit, it’s filled with ham and cheese, yum.

Mashed Potatoes with Blue cheese and Thyme

Okay, so things around the Wilde household are a little crazy at the moment. Let’s see if you can keep up… 1. Boyfriend and I are heading to Europe on Thursday, where we will road trip across the continent. 2. Job hunting season is upon us and I have an interview today. 3. I am trying to finish three projects before I leave for my dream job. I’m tired already. So what to eat for dinner when you have no time to make anything? Mashed Potatoes!


Now listen, I’m well versed in nutrition facts (I also work in the fitness industry as well as the lab), I know that potatoes alone do not make a meal. But when you add cheese, then you have dinner.  No, really. Mashed potatoes are easy. If you want to be really lazy you don’t even have to peel the potatoes before cooking them! I found the extra five minutes to do that, because I am not a fan of potato skin, unless they are drowned in cheddar cheese and bacon.


These mashed potatoes are just yummy. And nothing is more satisfying after a long day of packing, chemistrying and stressing, than a yummy dinner. The hint of thyme and the kick of blue cheese make it hard to stop yourself from eating the entire pot.  Maybe just throw down a V8 also, pretend like you're a healthy eater.


On a side note, while boyfriend and I are in Europe I have to decide whether to post the recipes I have stored away on my computer or to share our European vacation.  If you have a preference let me know!  I would be happy to share our destinations, adventures and eats!
