It's a simple, one baking sheet meal. Perfect for days you just want to throw together a meal. Acorn squash is the perfect gourd to go with because it doesn't require peeling. Just de-seed and slice the squash and it's ready to go in the oven! Sweetened up with some red onion and dried cherries, this meal will make a great dinner gift for anyone.

Acorn Squash and Sausage Bake
Adapted from Everyday Food
1 acorn squash, cut in half, seeds removed, cut into 1/2-inch slices
1/2 red onion, cut into small wedges
2 tbsp Grapeseed oil
4 sweet Italian sausages
1/2 cup grated Asiago cheese
1 tbsp fresh sage
1/4 cup dried cherries
Preheat oven to 475 F.
On a sheet pan, toss acorn squash and red onion with grapeseed oil. Arrange in a single layer and season with salt and pepper. Add sausages to the sheet pan and roast for 15 to 18 minutes, until squash is fork tender.
Remove sheet pan from the oven and sprinkle asiago cheese over the entire pan. Return to the oven for 5 more minutes, or until the cheese is melty. Remove from the oven and sprinkle with sage and dried cherries.
