It's Friday, so I think that means we need some pizza. Though let me give you some insight on my usual Friday night. It has been the same for almost three years...
Every Friday night, the boyfriend and I go to the same restaurant. Only occasionally do we stray from this restaurant, mostly because we aren't in the mood for burgers. The restaurant is a ten minute was from our place and we only drive in cases of extreme cold or rain.
Each week we order almost the same thing. It's gotten to a point that the wait staff knows us, not by name, but by order. We sit down with our food and play trivia. Specifically, Sporcle trivia on the iPad. It's so much fun. I know so many random facts now, I would probably be really useful in a trivial pursuit game.
Do you and your favorite person have any weekly or monthly traditions? The boyfriend and I have been trying to branch out and eat at different restaurants, but how many places will let you just sit there for an hour playing trivia and taking up a table?

Thai Chicken Pizza

This pizza takes quite a bit of preparation. You could probably make it over the course of two days, rather than spending an hour making a pizza one night. I absolutely loved this pizza and it tastes just like the restaurant version. I've noticed that the recipes in this cookbook are pretty true to the restaurant. If you love CPK, I would highly recommend picking up this cookbook! (And no, we don't spend our Friday nights at CPK, they would definitely kick us out for taking up a table for so long!)
For the peanut sauce
1/4 cup peanut butter
1/4 cup hoisin sauce
1/2 tablespoon honey
1 teaspoons red wine vinegar
1 teaspoons roasted sesame oil
1 teaspoon soy sauce
1/2 teaspoon Sriracha sauce
1/2 tablespoon oyster sauce
1 tablespoon water.
For the pizza
1 pizza dough crust (homemade, store bought or prebaked)
6 ounces pre-cooked chicken
Cornmeal (if you have raw pizza dough)
1 cup mozzarella cheese
2 scallions, diagonally cut
1/4 cup white bean sprouts
1/4 cup shredded carrot
1 tablespoon chopped, roasted peanuts
1 tablespoon fresh cilantro, chopped
Combine all of the sauce ingredients in a saucepan. Cook over medium heat until it comes to a boil. Let sauce boil for about 1 minute, remove from the heat.
Place a pizza stone in the over and preheat oven to 500 °F. If you don't have a pizza stone, you can cook your pizza on a baking sheet.
For a pre-baked crust - Spread sauce over the dough to within 1/2-inch of the edge. Cover with 3/4 cup mozzarella cheese. Add chicken, green onions, bean sprouts and carrots. Sprinkle remaining cheese on top of the pizza. Top with roasted peanuts. Follow the baking directions from your product packaging.
For Raw Pizza dough - Sprinkle the counter with cornmeal. Roll out pizza dough to approximately 12-inches round. Spread sauce over the dough to within 1/2-inch of the edge. Cover with 3/4 cup mozzarella cheese. Add chicken, green onions, bean sprouts and carrots. Sprinkle remaining cheese on top of the pizza. Top with roasted peanuts. Transfer pizza to the pizza the pizza stone (or baking sheet) and bake for 9-10 minutes, until crust is browned and toppings are bubbly.
Slice it up and serve it out!
